When cooking something like beef ribs, its really important to cook to temperature and not to time. This is demonstrated well in this video because if I'd cooked them to a specific time, they would be well over done! Every cut of meat is different - how its raised, fat content, how long its been aged for, how its been cut - all of these affect the final product which is why you should never follow a specific cook time. Cooking to temperature, using science, ensures that you'll achieve perfect results every time.
