Years ago, I met a barista named Simon Ochen. Simon was a competitor in the 5th Uganda Barista Championship held in Kampala in 2011. Like many of the Ugandan baristas, Simon is bright, energetic and enthusiastic about coffee. One of the most remarkable things about his competition presentation that year was his use of smoked milk.

The process of this smoked milk came from the cattle raising Bahima tribe in Western Uganda where it’s known locally as Amatte Go Muitiro - meaning smoked milk.

To make the milk, dry emburara grass is broken down and placed inside a vessel called omuitiso and then lit to produce the smoke. The milk jar, called echanzi, is inverted over the omuitiso, collecting the smoke. Milk is then added to the echanzi and allowed to infuse.

Meet Simon Ochen Eidodo, owner of Chariots Coffees in the Bugoloobi district in Kampala, Uganda. A most interesting and humble man pursuing coffee in his small shop where he serves drinks and trains the next generation of coffee professional.

I was last in Kampala in early 2019 and got to see the startup version of Chariots. A one room operation where Simon and his team did everything. Simon sent me a video recently so I could see how things have progressed, and I wanted to share it with you.
