Harvesting and drying the sweet onions today. The sweet onions that we grew in the community garden this year were Walla Walla and Alisa Craigs. Both of these varieties get very large and are excellent for making onions rings and for slicing to enjoy fresh.
The onions are ready for harvest when the tops start to turn yellow or when they flop over. These are all drying on a rack for the next two weeks. After they dry for a period of time we will snip off the roots and tops and finish the cure. We will dry these properly to get the best storage out of them as we can, however, sweet onions do not last as long as a traditional yellow storage onion. With this in mind, we start eating these right away.
