BEEF SOUP / GOVEDSKA JUHA
1 kg of beef or veal( looking for bones and fats to add flavour to soup)
2-3 carrots , stalk of celery
, 1/2 onion( slightly browned on the top of stove)
, green cabbage pieces/ rutabaga pieces ,
parsley roots if available ,
salt
Arrange all ingredients in large pot 3-5 l and cover with water , bring to boil, then lower the temperature and set to cook on low for few hours. Drain the soup and in smaller pot collect as much soup as many bowls of soup you plan to serve ...into smaller pot , bring to boil add your favourite soup pasta or rezance , add Vegeta and adjust salt if needed. Lastly, top it up with chopped parsley leafs.
HORSERADISH SAUCE / UMAK OD HRENA
One large horseradish root grated
, tablespoon of oil or butter ,
salt, pepper
,
cup of beef stock.
In small sauce pan warm up oil or butter, add cup of soup, salt, pepper and vinegar (optional), sugar , bring all to boil then add grated horseradish mix very quickly for a minute. Don’t overcook, this literally needs to be done in few minutes...otherwise horseradish will become bitter and will loose its flavour.
If you would like little thicker sauce ,then in cold soup mix tablespoon of flour or corn starch and bring to boil.Add salt, sugar and vinegar to the taste you can substitute lemon for vinegar if you like.
