Non Dairy Chocolate Pudding

Ingredients:
1 ½ cups of Coconut milk, full fat
¼ cup unsweetened cocoa powder
¼ cup coconut sugar
½ tsp. Vanilla extract
Pinch of salt
2 Tbsp. cold water
3 Tbsp. cornstarch

Directions:
Place the coconut milk, coconut sugar, cocoa powder, vanilla and salt into a 2 quart sauce pan.
In a small bowl combine the cornstarch and water with a whisk until smooth.

Place the pan on the stove over medium low heat and whisk. Once it just becomes warm, slowly pour the cornstarch mixture into the pudding and whisk constantly. Turn the temperature to medium and continue to whisk until the pudding thickens, about 2 minutes. Once it thickens, continue to cook and whisk for about 30 seconds. Turn off the heat and pour the pudding into individual serving dishes and enjoy!
