Almost all mayonnaise is considered Keto. However, a lot of store bought mayonnaise contain unhealthy vegetable oils such as Soybean, Canola, or Sunflower. These are cheap substitutes with an imbalance of Omega-6 and Omega-3 fatty-acids and can lead to metabolic issues. Making your own mayonnaise not only gives you ease of mind of what you're consuming but it's also better for the budget once you know how to make it.
So here, we're using avocado oil which is high in oleic acid (super healthy monounsaturated fat, omega-9 fatty-acid).
Recipe:
2 Egg Yolks
1/2 tsp Salt
2 tsp Dijon Mustard
2 Cups Avocado Oil
2 Tbsp Water (as needed)
Instructions:
1. Place yolks, salt, and dijon in a mixing bowl.
2. Whisk till fully incorporated.
3. Slowly drizzle in avocado oil while whisking. Few drops at time to start.
4. As oil and eggs begin to bind, drizzle in more oil while whisking vigorously.
5. When half the oil has been poured and mayonnaise is thick, add a tsp of water and whisk.
6. Slowly pour the remaining oil while whisking. Once all the oil is mixed, add a touch more water to get the right consistency you'd like.
7. Taste and adjust seasoning if needed.
So that's how to make keto mayonnaise with avocado oil. This is definitely one of my favorite keto mayo recipe because it's easy to make and it saves you money compared to buying mayonnaise already made with avocado oil. I love using this keto mayo in chicken salad, baked salmon, and salmon cakes. I'm sure you'll love it too!
