Egg with Pointed Gourd (Parwal/Parval) is a delightful and unique dish that combines the flavors of eggs and pointed gourd, popular in many parts of India. Here's a simple recipe to make this delicious dish:
### Ingredients:
- 250 grams pointed gourd (parwal), peeled and sliced
- 3-4 eggs
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2-3 green chilies, slit (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 3 tablespoons oil
### Instructions:
1. **Prepare the Pointed Gourd:**
- Wash and peel the pointed gourd. Cut them into thin slices.
2. **Cook the Pointed Gourd:**
- Heat 2 tablespoons of oil in a pan over medium heat.
- Add the sliced pointed gourd and sauté until they are tender and lightly browned. This should take about 10-15 minutes.
- Remove the cooked pointed gourd from the pan and set aside.
3. **Prepare the Masala:**
- In the same pan, add the remaining 1 tablespoon of oil.
- Add the finely chopped onions and green chilies. Sauté until the onions turn golden brown.
- Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
4. **Add the Spices:**
- Add the turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well and cook the masala until the oil starts to separate from the mixture.
5. **Combine Pointed Gourd and Masala:**
- Add the sautéed pointed gourd back into the pan. Mix well to coat the gourd slices with the masala.
- Add salt to taste and cook for another 5 minutes, allowing the flavors to meld together.
6. **Add the Eggs:**
- Beat the eggs in a bowl and pour them over the pointed gourd masala mixture.
- Gently stir the mixture, allowing the eggs to cook and scramble, mixing well with the pointed gourd and masala. Cook until the eggs are fully set.
7. **Finish with Garam Masala:**
- Sprinkle garam masala over the dish and give it a gentle mix.
- Cook for another 2 minutes to let the flavors blend.
8. **Garnish and Serve:**
- Turn off the heat and garnish with freshly chopped coriander leaves.
- Serve hot with roti, paratha, or rice.
### Tips:
- Adjust the number of green chilies according to your spice preference.
- For an added layer of flavor, you can sprinkle some fresh lemon juice before serving.
- Ensure that the pointed gourd is tender before adding the eggs to ensure even cooking.
