This is a one of a kind whiskey, which can never be repeated!
It’s the 2024 Vintage of the Pillars of Creation from Two Stacks. This is a project which Two Stacks have been working on for a few years now, and I’m so glad to see it come to fruition, as they have a great opportunity as an independent bottler and blender.
What they’ve done is take different whiskeys from different producers around Ireland, and blended them together to make something greater than the sum of their parts. But they didn’t just take any whiskey, this release is made up of single casks from some of the most exciting distilleries in Ireland.
The blend is made up of a 10 year old single malt from the Dingle Distillery, an 8 year old single pot still from the Echlinville Distillery, and a 4 year old single pot still from the Killowen Distillery. The Dingle and Echlinville were initially aged in 200 litre first fill bourbon casks, while the killowen was initially aged in a 120 litre refill bourbon “quarter cask”.
Two stacks took 100 litres from each of the casks, saving the rest for future releases, and blended them together for 2.5 years in a cream sherry cask. Cream sherry is the name given to sherry blends, and in this case, the previous cask held a blend of Pedro Ximinez, Oloroso and Amontillado sherries.
Coming in at 56.1% ABV, natural colour and no chill filtration, this is a really special release. But it’s only the 2024 vintage, and I contacted Two Stacks to try to find out about future releases, and I learned that the 2025 release will contain some Boann Single Pot Still whiskey, and was laid down in a Palo Cortado cask. So while that will be one to look out for, let’s focus on this one!
Two Stacks Pillars of Creation Tasting Notes:
Nose:
Quite sweet and creamy up front, with butterscotch and creme brulee, and a touch of the classic Dingle herbal malt. There's also nice oak spice and some chocolate coffee sweets as you sit with it.
Palate:
The mouthfeel is quite rich and oily on the approach, delivering a lot of rounded sweet notes, less like a sweet milk chocolate, and more like a high cocoa, almost dark chocolate. The sherry influence is quite apparent, but doesn't dominate the peppery pot still spice.
On the second sip, the creaminess combined with some biscuity malt reminded us of a baked, New York style cheesecake.
Finish:
The biscuity malt character and some of the white pepper pot still spice lingers on the finish, with the sherry flavour coming more to the fore on after a few breaths
Overall, this is a really special whiskey. Not only is it made up of really great spirit to begin with, the extra-long finishing and marrying in the cream sherry cask meant that instead of fighting with each other, the individual spirits were fully blended, working together and rounding themselves out.
While this release is totally sold out, the 2025 release will definitely be one to look out for!
