This ginger soup is very easy to make and it is loaded with healing properties. It is made with chicken stock which has electrolytes and is an anti-inflammatory, lots of ginger and lots of garlic, mushrooms, scallion and cilantro. This is definitely a great way to help you recover from a cold or flu or for anytime you feel like a soothing, calming meal. The recipe is 👇

Recipe -
8 cups of chicken stock
6 large pieces of ginger -- peeled
6 garlic cloves -- peeled and smashed
2 cups sliced mushrooms of choice (I used baby Bella)
1 scallion -- chop the whole thing white, light green and dark green
1/2 cup chopped cilantro
Place the stock in a pot with the ginger and garlic. Simmer for about 20 minutes. Remove the garlic cloves and four of the pieces of ginger.
Add the mushrooms and simmer for 15 minutes. Remove from heat and add the scallion and cilantro.
Enjoy warm.
