Obviously one of the most important aspects of a flagship smartphone is going to be the display. On the S21, things have changed when compared to the S20. The 6.2-inch AMOLED display will be flat on the S21, unlike the Ultra which retains the curves to the edges. Some might see that as a regression, but I personally prefer the flatter displays myself. There's also a shift in the resolution with both getting a Full HD+ resolution. That's also a change of direction of Samsung, which previously put a Quad HD+ display in all its Galaxy S devices. That's not likely to make a huge difference to the S21 with the smaller display, but means that the larger S21+ won't be able to produce as much fine detail. 

That probably won't matter: Full HD+ is the default resolution on Samsung devices and we suspect that many have never bothered to switch to Quad HD+ settings when that option was available. The S21 Ultra on the other hand does maintain that Quad HD+ resolution, and all models get brighter OLED panels this year as well.
