Mochi Pancakes Recipe
Ingredients:
1 cup all purpose flour
1 cup mochiko flour
1/4 cup granulated sugar
2 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cup milk
2 eggs
2 tablespoons butter, melted
1 1/2 teaspoons vanilla extract
Directions:
Add dry ingredients (flour, mochiko flour, sugar, baking powder, and salt) to a large mixing bowl. Whisk to combine and set aside.
To another bowl add milk, eggs, butter, and vanilla extract. Whisk until well combined.
Add wet ingredients to dry ingredients and whisk until well combined. The batter will be slightly thicker than your normal pancake batter. If you like thinner pancakes you can add a little more milk to thin out the mixture.
Pour pancake batter to a greased pan over medium heat to the size you whisk. Cook until you see bubbles begin to form on the top of the batter (about 2-3 minutes). Then flip the pancakes and cook for another 2-3 minutes on the other side or until golden brown.
Enjoy these with syrup, whipped cream, fruits, etc. Or follow the TikTok trend and eat with a bowl of milk.
