How to: Make Pasta
- Properly salted water makes a big difference to the taste of pasta
- To cook 1 pound of dry pasta, use 4-5 quarts of boiling water
- Use medium-high heat to boil water
- Add 2 tablespoons of salt
- Stir in the salt
- Then, stir in the pasta
- Always stir pasta as it's added to boiling water
- Stirring a couple of times during the first 2 minutes of cooking will keep the past from clumping.
- Once the pasta is added let the water boil again
- Then slightly reduce the heat to prevent boiling over
- As the pasta cooks, it become slightly bigger and lighter in color as it absorbs the water - two visual cues that show when it's time to taste for al dente tenderness.
- Before straining the pasta, reserve a half cup of cooking water. It can be used later to adjust the consistency of the sauce served with the pasta.
- To check if the pasta is done, remove a piece from the water and taste it.
- When the pasta is done, remove it from the heat and immediately strain it.
- The pasta will start to clump together shortly after it's strained, so quickly toss the hot pasta with the sauce and serve.
