No bake Mango Cheesecake
Ingredients:
Crust:
Biscoff cookies or graham cracker 1 box 250g (8 0z.) crushed
Butter melted 1/4 cup
Filling:
Cream cheese room temp. 548g (1 lbs. 3 oz.)
Sugar 1/2 cup
Vanilla 19g (2 Tblspn)
Lemon juice 10g 2 tspn 1/2 lemon
Mascarpone cheese 226g (8 0z.)
Heavy cream 247g (1 cup)
Gelatine 1 packet +1/4 cup water
Mango purée 2 mangoes
Mango chunks 2 mangoes
Mango Gelee:
Mango purée 1 mango
Water 1/2 cup
Sugar 1/2 cup
Lemon juice 1/2 lemon
Yellow food coloring 2-3 drops
Gelatine 1 packet bloomed with 1/4 cup water
Topping:
Heavy cream 1 cup
Powdered sugar 2 Tblspn
Vanilla extract 1 Tblspn
Mango chunks 1 mango
Blueberry 1/4 cup -optional
Mint for garnish optional
