Recipe:
500 g flour, 200 ml milk, 20 g fresh yeast, 4 g salt, 70 g sugar, 1 pkg. vanilla sugar, 1 egg yolk, 80 g butter (room temperature),1 lemon, Hail sugar, 1 tablespoon butter, one egg mixed with a little milk for coating.
Slightly warm the milk and dissolve yeast in it. In another bowl, mix together the flour, salt, sugar and vanilla sugar. Then add the mixture of milk and yeast, egg yolk, butter at room temperature and lemon zest. Knead with the dough for about 5 minutes until it is smooth. Grease the inside of the dough bowl with a little oil and let the ball rise in it, covered, at room temperature for about 2 hours. Now knead the dough well again on a floured surface and divide it into three equal pieces. Form three strands of dough that are about 35 cm long. Place the dough strands on a baking tray and braid them. Let the braid rise covered for another hour, brush with the egg-milk mixture and sprinkle hail sugar. Bake in a preheated oven at 350F for about 30 minutes.
