Stir-fried chow mein noodles with a colorful mix of vegetable slices and diced tofu marinated with savory Hunan-style sauce for an authentic Chinese meal. It's easy to prepare and full of flavor, making it ideal for any meal!

Ingredients:
6 oz silken tofu, diced
3 oz green cabbage, shredded
2 tbsp vegetable oil
2 cloves garlic, minced
7 oz chow mein noodles
3 oz carrot, julienned
2 oz brown beech mushrooms
1 oz green onions
1/4 cup vegetable stock
1 oz red bell pepper, julienned
Salt to taste
1 oz snow peas
Sauce
2 tsp cornstarch
2 tbsp teriyaki sauce
2 tbsp oyster sauce
1 tbsp black rice vinegar
2 tsp brown sugar
1/2 tsp sesame oil
1⁄4 tsp ground black pepper
Directions:
In a small bowl, combine the sauce ingredients.
Place the diced tofu in a large bowl and add in the sauce to marinate for 10 minutes.
In a heated pan or wok, add oil and minced garlic.
Sauté for a minute.
Add chicken breast and cook for high heat.
Stir in carrots, mushrooms, snow peas, and bell peppers on high heat.
Stir in vegetable stock and green cabbage.
Cook for 2 minutes until reduced.
Add the chow mein noodles and the remaining marinade.
Stir in to thoroughly combined and cook for another 2 minutes until the sauce is absorbed.
Season with salt.
Garnish with chopped spring onions before serving.
