▪️1 tbsp oil
▪️Knob of butter (optional)
▪️1 onion, roughly chopped
▪️2 leeks, washed and chopped
▪️3 medium potatoes, skins on, cubed
▪️2 cloves garlic, roughly chopped
▪️1 litre veg stock
▪️Salt & Pepper
▪️50 ml double cream (optional)
▪️80g grated mature Cheddar (optional)
Heat the oil and butter in a large pan, add the onions, leeks and garlic and cook gently for 5 mins or so until softened. Add the potatoes, stir well. Add the stock and simmer for 15 to 20 mins until potatoes are cooked.
Blend in a liquidiser or with a hand blender. Return to the pan, season to taste and add cheddar and cream if using. Warm through until melted.
Be all fancy and decorate with freshly ground black pepper, chopped chives and a swirl of cream.
