Grab your air fryer and let's learn to make KETO and CARNIVORE friendly Yakitori, also known as grilled chicken on a stick from Japan. Yakitori is easy to make with an air fryer (or a grill if you have one and prefer that method). This Carnivore meal is great for a party, great for kids, great for a big family dinner, and even great for date night. (Recipe Information Below)
I'll show you how to break down the chicken thighs off the bone, how to prepare the various kinds of yakitori, and how to air fry for the perfect bite every time!
Yakitori is flexible, so you can change the seasonings, you can use different chicken cuts (like chicken breast, chicken livers, chicken gizzards, chicken drum sticks, and more), but here I'll show you the most common chicken thigh version and how to get several varieties without having to purchase lots of extra chicken.

Here's the recipe information (which admittedly is more technique and ratios than exact amounts as this can vary widely based on the chicken you buy and how you prefer to make and season this dish). Enjoy!
Chicken Brine:
1 tsp salt per chicken thigh
1-2 tsp white vinegar per chicken thigh
Cold water enough to cover chicken thighs
Brine for at least 2-3 hours (or as much as 2 days in the fridge). Remove from brine and pat dry before making yakitori.
Toasted Beef Gelatin:
2 Tbsp beef gelatin powder
Toast in dry skillet over medium heat stirring constantly until a golden yellow color is achieved. Remove from hot skillet immediately. Do not taste by itself as it does not taste good alone.
Tsukune Chicken Meatball Mix:
4 boneless skinless chicken thighs (trimmed and cut into 1 inch pieces)
2 Tbsp pork rind crumbs (optional)
1 Tbsp toasted beef gelatin
1 tsp salt
1 raw egg
(Additional optional seasonings)
1/4 tsp white pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp sriracha style fermented pepper sauce
1/2 tsp shrimp powder
1 Tbsp freeze dried chives
1 Tbsp freeze dried parsley
Add all to food processor and pulse until combined. Turn on and blend until a cohesive sticky paste forms. Form around skewers. If using large skewers bake on parchment in oven at 400F for 15 minutes until springy and then finish in air fryer. If using small skewers and small amounts of mix you can just cook this in the air fryer and skip the oven.

Dipping Sauce:
1 batch butter mayo
2 Tbsp carnivore soy sauce
1 tsp white vinegar (optional)
1/4 tsp sriracha style fermented pepper sauce (optional)
1/4 tsp white pepper (optional)
Mix well and store in fridge until ready to serve.
Basting sauce for yakitori:
1/4 cup carnivore soy sauce
1 tsp toasted beef gelatin
Mix well and use with basting brush to baste yakitori in air fryer for last 2-3 minutes of cooking time.
Yakitori seasoning mix:
1 Tbsp salt
1 tsp white pepper
1 tsp toasted gelatin
