Ingredients
Fine Lapsi/Dalia/Broken Wheat 1/2 cup
Water 2-3 cups
Condensed milk 3/4 cup, as per sweetness
Thin Coconut milk 3 cups
Thick coconut milk 1 cup
Ghee 3-4 tbsp
Elaichi/Cardamom powder 1 tsp
Saffron strands few
Cashewnuts handful
Pistachios 1/2 tsp for garnish
Method
1. Take a bowl, add the Lapsi and add some water. Wash thoroughly and drain the water.
2. Heat a pressure cooker with ghee 1 tbsp, add the Lapsi and saute for 2 minutes. Add water, mix and close the lid and cook for 2 whistles.
3. Open the lid of the cooker and mix well. Add 2 cups of thin coconut milk and mix. Simmer on very low flame. After 2 minutes add one more cup of thin coconut milk.
4. Add the condensed milk and cardamom powder. Mix well. Check the sweetness and add more condensed milk if required. Adjust the sweetness as per taste. Now add 1 cup of thick coconut milk and mix.
5. Simmer for 10 minutes. Add a few strands of saffron. Mix and switch off the flame.
6. Add some ghee to a pan and saute the Cashewnuts until golden brown in colour. Add this to the kheer and mix well.
7. This Kheer is best relished with some hot pooris.
