Aunty Mary shows how to cook this simple, and easy recipe pan fried turmeric chicken thighs with easy recipe turmeric rice using rice cooker, garnished with cashew nuts, chopped coriander leaves and crispy fried shallot.

The taste, combination of flavours and textures is beautiful. Can serve all the items separately and people help themselves or serve everything on individual plate.

Ingredients For Turmeric Chicken

1 kg chicken thighs, remove skin, de-bone and cut into bit sized pieces (about 700g meat)
1/2 Tbsp turmeric powder1/2 Tbsp curry powder1 tsp salt
1 tsp sugar1 tsp garlic powder
1 tsp ginger powder

Ingredients for Turmeric Rice

6 C rice ( use rice cup, wash the rice)
1-2 Tbsp oil30g butter
3/4 C evaporated milk
3 pcs chicken stock cubes, crumbled
1 tsp turmeric powder
1/2 bulb garlic, peel and chop
1 knob ginger, slice thinly
1 onion, peel and dice
2 pcs bay leaves

Note :
1. You can use ready de-boned and skinless chicken thighs. Only that they are more expensive.
2. The chicken bones are good to make good chicken stock
3. Chicken thighs are more tender than chicken breast meat.
4. You can use ready roasted cashew nuts. They are more expensive.
5. Using rice cooker is the easiest way to cook rice. Can just leave it there and walk away.
6 You can make your own fried shallots or buy ready fried ones. I bought the ready fried ones.
