Pierogi

Dough:
2 cups flour (250 g) / 9- oz. all-purpose flour
1/2 cup + 1.25 Tbsp water 140g /140ml / 5-oz
1.5 tablespoons butter 1.4 oz/40 g, or vegetable oil
.5 teaspoon salt



Filling:
2.5 medium potatoes
3 oz., 90g salted pork fat
3 oz., 90 g cheese. Your choice. I used Laughing cow cream cheese
1 medium yellow onion
