Ingredients:
For the Ice Cream:
- 250g Strawberries
- 2 tsp Lemon juice
- 1 tsp Vanilla extract
- 75g Icing sugar
- 150ml Whole milk
- 400ml Double cream
- 75g White choc chips
For the Strawberry Sauce:
- 75g Strawberries
-1/2 tsp Vanilla extract
- 1 tsp Lemon juice
- 20g Icing sugar
Method:
STEP 1 Put the chopped strawberries, vanilla extract, lemon juice and icing sugar into a mixing bowl and blend together. You can use a food processor or a hand blender to do so.
STEP 2 Add the milk and whisk in.
STEP 3 Add the double cream and whisk in.
STEP 4 Transfer to a jug, and pour into the Ice Cream & Gelato Professional.
STEP 5 Set the timer for 45 minutes.
STEP 6 While it is churning, make the strawberry sauce by blending the ingredients together with a hand blender or in a food processor.
STEP 7 When there is 5 minutes left, open the lid and add in the white chocolate chips.
STEP 8 Layer up the ice cream into a tub, swirling strawberry sauce between each layer, add a sprinkle of white chocolate chips to the last layer if you like.
STEP 9 You can eat it right away, or freeze for 2 hours for a harder texture.
