French Fries in Gravy, Chef Frank shares his recipe for this retro diner side dish.
INGREDIENTS...Gravy
3 c water
3 tbsp fat
1/3 cup flour
1 tsp salt
1/2 tsp bulk pepper
1 tbsp chicken bouillon
dash thyme
3 tbsp veg oil
2 tbsp kitchen bouquet
1/2 cup milk
Gravy Recipe
1. Heat 3 tbsp veg oil/beef fat.
2. Brown 3/4 onion.
3. Add 3 tbsp flour. Whisk for 3-4 minutes.
4. Gradually incorporate 3 cups of water. Use whisk.
5. Add seasoning and kitchen bouquet.
6. Reduce on low heat until gravy reaches desired thickness, stir regularly.
7. Add 1/2 cup milk.
8. Simmer for 10 minutes.
9. Strain to remove lumps (optional)

1 lg. potato
1/2 cup milk...used twice
2 eggs
2 cups flour
1 tsp salt
1/2 tsp bulk pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 paprika
1/4 tsp cayenne
1. Whisk together eggs and milk.
2. Combine flour and seasoning.
3. Cut potatoes into large fries.
4. Boil fries for 5 minutes, then place in ice bath.
5. Put fries into egg mixture.
6. Coat fries with flour.
7. Fry at 325-350 for 5 min or until brown.
