Ingredients:
400 ml can of full-fat coconut milk
1/2 cup granulated erythritol or low-carb sweetener
1 tsp vanilla extract
Pinch of salt
Optional: your desired mix-ins (e.g. nuts, berries, chocolate chips, etc.)
Instructions:
In a medium saucepan, heat the coconut milk, erythritol, vanilla extract, and salt over medium heat until the erythritol has dissolved.
Remove from heat and let cool to room temperature.
Pour the mixture into a freezer-safe container and freeze for 1-2 hours, until it has started to freeze around the edges.
Using a fork, break up the frozen edges and stir them into the middle. Repeat this process every 30 minutes until the mixture is frozen and creamy.
If adding mix-ins, fold them in during the last stir.
Once the ice cream is frozen, transfer it to an airtight container and store in the freezer until ready to serve.
