Ingredients:
4 red bell peppers
1 small carrot
2 small tomatoes
3 or 4 garlic cloves
1/2 medium sized yellow onion
Olive oil
Salt and pepper
Water or vegetable stock or chicken stock
Paprika to taste
Oregano to taste
1 tablespoon tomato paste
Toppings: crouton, cream, red pepper flakes and basil


Roast vegetables at 375 F in pre-heated oven. Remove the garlic skin and transfer them to blender. Add water and blend until smooth. Pour soup into a pot, add salt, paprika and oregano. Add more water if needed and heat up to your desired serving temp.
