Hello and welcome back to West Indian Cuisine. Today we are making Guyanese style Dhal. We hope you enjoy! Please see below for exact measurements and ingredients.
Guyanese Style Dhal Recipe
Ingredients:
Yellow split peas
Garlic paste
Onion paste
Tumeric powder
Onion powder
Garlic powder
Geera/cumin (whole cumin seeds & powder as well)
Garam masala
Curry powder
Whole garlic
Instructions:
Serving size: 6-8 portions
PART 1
1. Rinse and add 1 & 1/2 cup yellow split peas to 10 cups of water in pressure cooker. Alernatively, you may boil in regular pot.
2. Add 2 tbsp garlic paste, 2 tbsp onion paste, 1/4 tbsp tumeric powder, 1/2 tbsp onion powder, 1/2 tbsp garlic powder, 1/2 tbsp geera/cumin, 1/2 tbsp Garam masala, 1/2 tbsp curry powder
3. Stir to combine
4. Add salt to taste
5. Pressure dhal for 15 minutes
6. Use hand mixer to make dhal smooth and to remove grains
PART 2
To chunkay the dhal:
1. Add oil to a small pot, when oil is hot add 2 tbsp cumin seeds and 3 cloves of garlic finely chopped for a few minutes until golden brown
2. Add 1/2 tbsp cumin powder, 1/2 tbsp garlic powder to oil and stir
3. Remove mixture from stove and slowly add to dhal mixture from Part 1
And voila you’re finished, you now have a lovely pot of West Indian style dhal which you may enjoy over fresh rice and curry or many different ways.
