CHEESECAKE IN A JAR:
1 cup cottage cheese
1 cup plain Greek yogurt
3 tablespoons sugar-free sweetener
2 tablespoons lime juice
Zest from 1 lime
1 teaspoon vanilla extract
High Key wafer cookies
Add cottage cheese, yogurt, sweetener, lime juice, lime zest and vanilla to a blender or food processor. Blend until smooth.
Add wafer cookies to a gallon sized ziploc bag. Using a rolling pin, crush the wafers until crumbs form. Or do this in a food processor.
To assemble, Sprinkle a small layer of crush cookie then top with cheesecake filling. Make sure your jars are small enough to show it filled to the top with the filling and a distinct layer of cookie at the bottom.
SRIRACHA EGG SALAD8
hard boiled eggs
3 tablespoons mayonnaise
1 ½ tablespoons Greek yogurt
1-2 teaspoons sriracha
½ teaspoon sugar free honey
Salt & pepper to taste
Keto bread
Green leaf lettuce
Using a cheese grater on the largest grate side, grate hard boiled eggs into a large bowl.
Add remaining ingredients. Stir to combine.
Assemble in a sandwich using keto bread and green leaf lettuce.
