Vegan Bangers and Mash 🇬🇧
• 1 cup vital wheat gluten flour
• 2 tbs plain flour
• 1/2 cup unsalted veggie broth
• 1/4 cup coconut oil
• 250 g white button mushrooms, stems discarded
• 1 tsp salt, pepper, ground coriander, onion powder, and smoked paprika
• 1/2 tsp garlic powder
• 3 tbs nutritional yeast • 1 piece sun-dried tomato
• 1 tbs Dijon mustard
• a handful of fresh sage
• vegan mashed potatoes • vegan onion gravy

Instructions:
1. Mix together vital wheat gluten flour with plain flour in a large bowl.
2. Blend mushrooms, sage, vegetable broth, coconut oil, spices, and seasonings together until smooth.
3. Knead the mixture for about 10 minutes and leave to rest for 20 minutes.
4. Form the dough into a shape of a sausage and wrap with parchment paper, followed by cheese cloth, tied both ends with cooking strings.
5. Steam on low heat for 1 hour.
6. Sear the sausages before serving with mash and onion gravy.
