In today's video, I'm sharing a delicious colorful and easy to make Shakshuka recipe. A classic Middle-Eastern/North African dish that is perfect for breakfast, brunch or even as a dinner. This dish contains nicely cooked eggs in a rich and savory tomato pepper sauce, seasoned with paprika, cumin and fresh chili for some spiciness.
Ingredients:
3 tbsp of olive oil
2 Slices of bread (this can be any kind of bread you prefer)
1 Shallot
1 Green paprika
1 Chili
1 Clove of garlic
Few sprigs of coriander
Few sprigs of parsley
1/2 tbsp of cumin seeds
1/2 tbsp of paprika powder (I use La Chinata, my favorite brand)
1 Tin of 400g / 14 oz chopped tomatoes
4 Eggs
6 Slices of Gouda cheese (can also be with Feta, Mozzarella, Monterey Jack etc.)
Description:
1. Preheat the oven to 230°C / 445°F.
2. Cut 2 slices of 2 cm of bread, and sprinkle a total of 2 tbsp of olive oil on both sides.
3. Toast the slices of bread on both sides for a couple of minutes in the oven.
4. Cut the Shallot into small cubes.
5. Cut the green paprika into 2 cm cubes.
6. Cut the chili in thin rings.
7. Cut the clove of garlic in small pieces.
8. Cut the coriander and parsley fine.
9. Put a pan on medium heat and put 1 tbsp of olive oil into the pan.
10. Put all the vegetables and the spices (not the coriander and parsley they are for later) into the pan and let it cook for 5 minutes while you stir occasionally.
11. Put in the tin of tomatoes and some pepper and salt to taste. cook for another 5 minutes while you stir occasionally.
12. Turn the heat on low and add 4 eggs (keep the egg yolks whole) on top of the tomato sauce and cook for around 6 minutes. (i like to cook my egg yolks really cooked, you can also cook them shorter for a runny egg yolk.
13. Put 1/2 tsp each pepper and salt over the eggs.
14. Lay the cheese on top and mellt for 1 minutes with the lid on the pan.
15. Sprinkle the coriander and parsley on top of the Shakshuka.
16. Enjoy!
