Potato Stew Recipe || How to make Easy & Simple Potato Stew for Appam, Idiyappam, Chapathi etc.|| Kerala Potato Ishttu
(I herewith share the perfect recipe of Kerala Style Potato Stew / Ishttu, which is an easy to make recipe, very mild in flavor and goes best with Paalappam, Idiyappam, Pathiri, Chappathi, Poori or with steamed rice of your choise. Enjoy this special recipe of Potato Stew !!!!!)
Ingredients
Potato - 2 nos Big
Onion - 2 nos medium
Green Chilly - 4 nos
Ginger - 1 medium pc
Turmeric - ¼ tsp
Salt - to taste
Cardamom - 6 nos
Pepper - 6 nos
Coconut Oil - 2-3 tbsp
Curry Leaves - 1-2 stalks
Mustard Seeds - 1 tsp
Dry Red Chillies - 3-4 nos
Fenugreek - ¼ tsp
Fennel Seeds - ½ tsp
Red Chilly Powder - 1 pinch
Cornflour - 1 tsp
Coconut Milk - 1 cup
Method of preparation
Into a pan goes, 1 tbsp coconut oil. Once the oil is hot, add ginger, green chilly and saute. Now add the potato pieces and saute. Add the onion, enough salt, cardamom, pepper corns and turmeric powder and stir well. Saute lightly for 2 minutes. Now add 2 glasses of water and mix well again. Now soft cook the potato, with closed lid for 5 minutes. Check the salt level at this stage. Now keeping the flame on low, add the coconut milk and mix again. Add 1 tsp of corn flour dissolved in 2 tbsp of water without any lumps. Now mix everything together and let the gravy start to boil and switch off the flame.
Now garnish the potato stew with coconut oil, mustard seeds, dry red chillies, curry leaves, fennel seeds, fenugreek and a pinch of red chilly powder. Final garnishing can be done with chopped coriander leaves. Keep the stew with lid closed for 10 minutes before serving.
Very tasty and lightly flavoured stew is ready for you to relish with your favourite main dish.
