COTTAGE CHEESE MOLTEN BROWNIES!
This recipe is fluffy on the edges, flakey on the top, and gooey in the center! It's also:
- low carb
- keto friendly
- high in protein
- grain free
- gluten free
- and NUT FREE

Ingredients:
- 1 cup cottage cheese
- 2 eggs
- 1/2 cup chocolate chips (I used @evolvedchocolate)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup of Bethany's Pantry protein bake powder (linked in my bio under "Bethany's Pantry" - this keeps it flour-free and low carb / high protein)
- 1 tsp baking soda
- 1 tsp instant coffee (optional)
Blend all the ingredients then bake in a lined 8" square pan at 350 F for about 20 - 25 minutes. Allow to cool and "deflate" before slicing.
