Today’s video is a little bit different, I share my all time favourite go-to vegan lunch that I batch cook for the week.
Recipe:
-Onion
-Garlic
-Mushrooms
-Kidney beans
-Chopped tomatoes
-Lloyd Grossman Bolognese sauce (any will do but we enjoy Lloyd!)
-Linda McCartney Vegemince
-Spaghetti
Instructions that work for me:
Fry onion, garlic and mushrooms for 5 mins
Add the mince and fry for 5 mins
Add the chopped tomatoes and Bolognese sauce
Add the beans
Add some salt and pepper in
Simmer for 10-20mins depending how long you have, more time more flavour
Start cooking your pasta
Enjoy!
I don’t use oil but use water instead as I track my calories and macros and adding oil just doesn’t seem worth it when with a decent pan and water it doesn’t stick and tastes great.
