Pickled cucumbers are a staple during summers in Japan, and today I want to show you how to make these easy 5-ingredient Japanese cucumber pickles at home. This was my grandpa's pickle recipe, and the cucumbers are brined in beer and wasabi. It may sound a bit weird, but the pickles are savory-sweet and spicy, and the beer adds loads of umami without resorting to MSG.

20 grams salt (1 generous tablespoon)
60 grams sugar (~1/3 cup)
3/4 cup beer
1 tablespoon wasabi
