Italian Stuffed Peppers
2 green bell peppers, halved and seeds removed
1 lb ground beef, sautéed with onion and garlic
Red pepper flakes to taste
Italian seasoning to taste
Salt and pepper
1 jar marinara sauce
1.5 cups shredded mozzarella
Place peppers cut side down on a baking sheet lined with foil and sprayed with cooking spray. Spray peppers as well. Roast for 10 minutes at 400 degrees. Set aside to cool. Combine ground beef with seasoning and enough marinara sauce to create a thick mixture. Add ½ cup cheese to beef mixture. Place peppers cut side up in baking dish spread with a small amount of marinara sauce. Stuff peppers with beef mixture, top with remaining sauce and cheese. Freeze. When ready to bake, bake at 400 degrees until heated through and cheese is melted and brown.
Tater Tot Casserole (makes a 9x13 casserole)
2 lbs ground beef, sautéed with onion and garlic
2 cans cream of chicken soup
1 cup milk
12 slices American cheese
1 bag tater tots
1 bag mixed vegetables
Mix ground beef with soup, milk, and veggies. Heat through and combine. Season with salt and pepper. Pour into dish and top with sliced American cheese. Top with tater tots. Freeze. Can be baked at 425 degrees for about 35-40 minutes, until bubbly and the tater tots are crispy. We like to serve with cottage cheese.
Pizza Burgers (recipe from Shelby at the Queen’s Cabinet)
1 lb ground beef, sautéed with onion and garlic
6 oz tomato paste
½ cup water
1 packet sloppy joe mix
1 pkg of 8 hambuger buns
8 oz sliced cheese
Heat ground beef, tomato paste, water, and sloppy joe mix until hot and combined. Top hamburger rolls then top with cheese. Bake at 350 until cheese is melted and bubbly. If freezing, freeze rolls and cheese separate from meat mixture and assemble prior to baking.
