James Forrest creates two Scotch Beef recipes. The first is a braised beef cricket served with smoked marrow bone mayonnaise. The second is a Scotch Beef Burger made with prime Scotch Beef. This is served with a home made bacon Jam and blue murder cheese in a brioche bun. The Burger Meats Bun chef James Forrest then serves it with sea salt fries and chicken wings.
