Have you ever tried Pani ke Pakode? Pani ke Pakode is an interesting street food that is quite easy to replicate at home. Pani ke Pakode is simply besan pakoras that are added to a spicy pani and hence the name Pani ke Pakode. I have added my own fruity twist to the Pani ke Pakode by adding guava juice to the pani! It makes for a very interesting pani flavour and makes Pani ke Pakode an excellent anytime spicy, snack to try out!

Recipe :
Pani Ke Pakore
Preparation Time: 20 minutes:
Cooking Time: 20 minutes
Serves: 3-4
Ingredients:
1 Cup Gram flour
1/2 tsp Red Chili Powder
Salt as per Taste
2 glass Water
1/2 cup Tamarind Pulp
Salt as per Taste
1/2 tsp Black Salt
1/2 tsp Cumin Powder
1/2 tsp Chaat Masala
A pinch Asafoetida
1/2 tsp Red Chili Flakes
Red Chili Powder
¼ cup Mint Leaves
2 tbsp lemon juice
1 cup Coriander
3-4 green chilies
200ml guava juice
½ tsp Sugar
½ tsp baking powder
Oil to fry
Onion rings, lemon wedges to serve
Instructions
Take gram flour red chilli powder, salt as per taste, in a bowl.
Add water, little at a time, to make a smooth medium thick batter of dropping consistency. Whisk well for 5 minutes in one direction to get a light & fluffy batter.
Cover the batter and let it rest for 10 minutes.
Add 2 glasses of water to a bowl. Now add 2 tbsp of green chutney, tamarind water, guava juice and mix well.
Add salt, black salt, roasted cumin powder, chaat masala, a pinch of asafoetida, red chilli powder, finely chopped mint leaves, chopped coriander leaves, 1/2 tsp of sugar, lemon juice and mix well.
Now check your batter add baking powder and whisk well again for 1 minute.
Heat 2” oil in a pan.
One by one, take a small portion of batter, drop them into oil and fry well.
After Phulki starts floating, flip them with the spoon and fry.
After your Phulki turns golden, transfer them to a bowl of water.
After 30-40 seconds, squeeze the water from all Phulki and transfer them into prepared Phulki Water and serve.
