Hyderabadi Kaddu Ka Dalcha is a famous Hyderabadi recipe made using mutton cooked along with mashed Bengal gram
METHOD
1.Bengal gram - 100 gram
Soak in water for 30 minutes then cook in pressure cooker till smooth
2.Then grind or mash it well and keep aside
3. In a bowl soak lemon sized tamarind in water then mash it and strain the pulp.
4.In a pan heat oil - 3 tablespoon
To it add
Cinnamon sticks - 4
Caraway seeds - 1/2 teaspoon
Cloves - 3
Cardamom - 2
Saute it for 15 seconds
5. Add sliced onions - 2 medium sized and saute it till colour changes
6.Then add ginger garlic paste - 1 tablespoon saute it also till raw smell disappears
7.Add Kashmiri red chili powder - 1 tablespoon
Turmeric powder - 3/4 teaspoon
Saute for few seconds
8. Add diced tomatoes - 2 medium sized cook till they turn smooth
9.Add mutton - 250 gram and salt
Cook it then add water and cook till mutton turns 90% tender
10. Now add pieces of bottle gourd - 15 to 20
And cook this also under high flame for 2 minutes then add the tamarind pulp and cook till raw smell of tamarind disappears
11.Add the mashed bengal granm mix well and add water - 3 glasses
12. To this add
Green chilies - 5
Few curry leaves
Few coriander leaves
Salt - as required
13. Cook it under high flame when it starts boiling simmer for 10 minutes
14. Hyderabadi kaddu ka dalcha is ready you can have it with pulao or zeera rice or ghee rice
