This orange upside down cake is so fresh and delicious. Such a light and citrusy dessert that is a perfect way to use tangerines. Easy cake recipe.
Orange Upside Down Cake
Ingredients:
4 tangerines
1 egg
Pinch of salt
¾ cup sugar
6 tablespoons butter, melted
1 cup flour
1 teaspoon baking powder
1) Preheat oven to 350 degrees F
2) Grease and flour your baking dish, sprinkle sugar on the bottom of the dish
3) Peel and cut 3 tangerines in half and place face down on the bottom of the dish, set aside
4) Zest 1 tangerine, set aside
5) In an immersion blender, blend 1 tangerine, 1 egg and pinch of salt
6) Strain mixture into a bowl then whisk with zest of 1 tangerine and sugar
7) Add melted butter and whisk
8) Sift flour and baking powder and whisk until smooth
9) Pour over tangerines into baking dish
10) Bake for approximately 35 minutes
11) Let cool then flip over onto serving dish
12) Sprinkle with powdered sugar, serve and enjoy!
**This recipe fits a 6 x 9 baking dish but you can easily double the recipe to make a full sized cake.
