This BBQ Chicken that I pre-cooked in my Power Pressure Cooker XL and then finished on the Charcoal Grill was so good. Kylee, my granddaughter, ate about 7 or 8 pieces from Sunday to Tuesday. I lost count. LOL Everyone loved it and it was so simple. I also show you how to start a Charcoal Grill with a Chimney Starter.
Recipe for BBQ Chicken
Ingredients
Chicken Thighs and Legs (Bone In, Skin On)
4 cups water
1 1/3 cup Sweet Baby Rays BBQ Sauce plus more for Grill
1/4 cup Frank's Red Hot Wing Sauce
1 1/2 Tbsp Onion Powder
4 sprigs of fresh Rosemary
1 Tbsp Granulated Garlic
1 Tbsp Smoked Paprika
1 Tbsp Kosher Salt
1 Tbsp Coarse Ground Black Pepper
Instructions
1. Put all ingredients but Chicken and BBQ Sauce for Grilling in Pressure Cooker
2. Stir it up good.
3. Add Chicken
4. Close and lock lid and make sure vent is closed
5. Set it on 10 minutes on the meat setting.
6. Go outside and start your charcoal grill.
7. After it is done, do a quick release and get the chicken out and put in bowl to take outside with you.
8. Take the bowl of chicken and the bowl of BBQ Sauce outside to the grill with you.
9. Put the chicken on the grill skin side down and slather the other side with the BBQ Sauce.
10. Let cook on grill until it looks and smells done then flip it over and put remaining BBQ sauce on the skin side of chicken.
11. Let cook until BBQ sauce is caramelized a little, then remove it to another big bowl and eat and Enjoy!!
