### Ingredients
- 1 cup fresh drumstick leaves (moringa leaves)
- 1/4 cup chana dal (split Bengal gram)
- 1/4 cup urad dal (split black gram)(optional)
- 4-5 dried red chilies
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida (hing)
- 1 tbsp tamarind (optional)
- Salt to taste
- 1 tbsp oil

### Instructions

1. **Preparation**:
- Wash and dry the drumstick leaves thoroughly. Make sure there is no moisture left.
- If using tamarind, soak it in a little water to soften.

2. **Roasting**:
- Heat a pan and dry roast the drumstick leaves on low flame until they become crispy. Keep aside.
- In the same pan, heat oil and roast chana dal, urad dal, dried red chilies, cumin seeds, mustard seeds, and asafoetida until the dals turn golden brown and you get a nice aroma. Be careful not to burn them.

3. **Grinding**:
- Let the roasted ingredients cool down.
- In a mixer grinder, first grind the roasted dals and spices to a coarse powder.
- Add the drumstick leaves and tamarind (if using), and grind again until you get a fine powder.
- Add salt to taste and give it one last mix.

4. **Storage**:
- Store the drumstick leaves masala podi in an airtight container. It can be used for a few weeks if kept in a cool, dry place.

- Use it as a sprinkle over dosa, idli, or uttapam.
