The traditional Pervian cau cau is made with tripe, in this recipe I am making it with chicken.
1 whole Chicken breast, cut in cubes ; una pechuga de pollo cortada en cubos
3 to 4 medium potatoes, cut in cubes; papas medianas en cubos
1/2 red onion, chopped; media cebolla roja picada
2 garlic cloves, diced; dos ajos picados
1/4 tsp of Peruvian yellow chile (optional); un cuarto de cucharita de aji amarillo
1 cup of frozen sweet peas; 1 taza de alverjitas
1 Tblsp of turmeric; 1 cuchara de palillo
1/2 Tblsp of cumin; media cuchara de comino
1/2 cup of mint, chopped ; media taza de menta picada
Salt and pepper
Seasoning chicken with turmeric, cumin,salt and pepper; sear it and remove it from the pan
Saute onions, garlic and yellow chile for 3 minutes, add chicken, potatoes, half of mint and 2 cups of water
cook it til potatoes are done, aprox. 10 minutes
Add sweet peas, Serve with rice....enjoy!
