In this video I smoke a small 2-1/2lb pork butt on my Big Green Egg. I used B&B Mesquite lump charcoal with Apple wood chunks as my fuel and seasoned with my own Texas Trinity and Gator Shake from uncle Steve’s shakes.
For this cook instead of making pulled pork I cooked to an internal temp of 170 and sliced the pork. It turned out amazing.
