3 easy vegan comfort food recipes that are WFPBNO (whole food plant based no oil) is what I will be sharing with you today. When I first went plant based I really missed some of my favorite comfort foods. The beauty of a WFPBNO way of living is that you can have all your favorite comfort foods with a few minor changes. I hope you enjoy these recipes. The full recipes for all 3 are below.
VEGAN CHICK'N SALAD (SERVED 2 WAYS)
FIRST THE RECIPE FOR THE VEGAN MAYO
**one 12 ounce box of Mori Nu silken tofu drained
1 1/2 T lemon juice
1 tsp granulated sugar
1/2 tsp salt
1/8 tsp white pepper
1/4 tsp dry mustard
Instructions
place all ingredients into a food processor and blend till smooth.
Store in a glass jar in the fridge.
**PLEASE NOTE IT IS IMPORTANT TO GET THE CORRECT TOFU, OTHERWISE YOU MAY NOT GET THE CONSISTENCY AND FLAVOR YOU WANT. YOU CAN FIND THIS TOFU ON THE ASIAN AISLE OF THE MOST GROCERY STORES.

RECIPE FOR THE VEGAN CHICKEN SALAD
ingredients
1 can chickpeas rinsed and drained.
1/4 cup red onion diced
1 rib celery diced
2-4 T MAYO
1 tsp Dijon mustard
salt and pepper to taste
Instructions
put chickpeas in a bowl and do a rough mash with a fork or potato masher
add the rest of the ingredients and mix well.
You can serve it in lettuce leaves topped with chopped tomato or as a sandwich on toasted bread with lettuce and tomato.
MAC AND CHEESE
INGREDIENTS
1 1/2 cups elbow macaroni cooked to packaged directions
1 cup plant based cheese (recipe below)
1/2 cup cooking water
1 cup chopped steamed broccoli
1 cup chopped fresh spinach
1 cup chopped tomatoes
3-4 chopped black olives
Drain the pasta and set aside. Put the pot back onto the stove and add cheese sauce and cooking water on low heat. Stir till smooth and sauce is warm. Turn off heat and add the rest of the ingredients and mix well and let sit on the stove for a couple minutes covered until the spinach wilts a bit.
RECIPE FOR BROCCOLI MUMS CHEESE SAUCE
1 head of cauliflower
1 medium potato
1 tsp garlic powder
1 tsp onion powder
1/3 cup nutritional yeast
1 tsp salt
1/4 cup soy milk
1/4 - 1/2 cup water more if you want it thinner (use the cooking water)
Juice of half a lemon
Boil the potato and the cauliflower till fork tender. Once the potato and cauliflower are done add to a blender with the other ingredients Use the cooking water for the water in the recipe. blend till smooth
