This is a repeat of Leslie's original "Veggie Burrito Bowl" recipe instruction recorded for submission to the Physician's Committee for Responsible Medicine (PCRM)'s Food for Life Cooking Instructor 2014 training classes. (Technical difficulties kept the earlier more detailed version from being uploaded!)
Recipe Ingredients:
Zesty Cold Veggie Mix Topping:
1 medium fresh diced tomato
1 - 2 bell peppers (mix of red, yellow and orange used)
1/2 cup mix of chopped sweet Vidalia onion and scallion or spring onion
1/2 - 1 avocado diced
1/4 - 1/2 cup chopped fresh cilantro
........ tossed with juice of 1 lime and 3 Tbs - 1/4 cup apple cider vinegar
Served over hot bed of:
1 cup cooked whole grain brown or black rice (or blend)
1/2 cup black beans
1/4 cup cooked corn
