Creamy, Satisfying Broccoli Potato Soup. Quickly put together in your Instant Pot and cooks for only 12 minutes. So delicious and rich -- and It's VEGAN!

Recipe:

1/2 yellow onion, peeled and roughly chopped
3/4 (approx) pound fresh broccoli, stalks peeled, and roughly chopped.
2 large peeled potatoes, roughly chopped
4 to 4 1/2 cups broth (approx.) Your choice of vegetable or chicken
1 teaspoon pepper
Hold on salt and season to taste after soup is finished.

Set IP on saute and heat up. Add one teaspoon olive oil. Add chopped onion and cook briefly.

Add remaining ingredients to the Instant Pot or stove-top pot.

Cover with broth. Set IP on "Manual". Close lid and make sure it is in the sealed position. Cook until tender. For the Instant Pot, set for 12 minutes. Stove-top – cook until tender, about 45 minutes.

Use a stick blender or a blender (Take care while blending as this is HOT liquid.) Blend until very smooth.

Season to taste.
