Ingredients for Raan Roast:
- 1 Mutton Raan (1 or 2 kgs)
- - - Water (as needed)
- 4 Tablespoons Vinegar
- - - 2 Tablespoons Ginger Garlic Paste
- 1 Tablespoon Salt
- Marinade:
- - ¾ cup Yogurt
- - 10 Lemons (Juice)
- 3 Tablespoons Ginger Garlic Paste
- - - 2 Tablespoons Oyster Sauce (optional)
- 2 Teaspoon Salt or according to taste
- - - 1 Tablespoon Red Chili Powder
- 1 Teaspoon Turmeric Powder
- - - 1 Tablespoon Meat Tenderizer
- 2 Tablespoons Cumin (Zeera)
- - - 1 Teaspoon Black Pepper Powder
- 1 Teaspoon All spice powder (Garam Masala pwder)
- - - 2 Teaspoon Dry Coriander Powder
Marinate Overnight
- 1Cup Butter
- - - Lemons as needed
(Steam for 3-4 hours)
- Oil for frying (optional)
Ingredients for Yakhni Pulao:
- 3 Medium sized Onions (sliced)
- - - 1 Cup Oil
- 3/4 Cup Yogurt
- - - 3 Tablespoons Biryani Masala
- 1 Tablespoon White Cumin (Safaid Zeera)
- - - 1 Tablespoon Black Cumin (Kaala Zeera)
- 4 Cinnamon Sticks (Daar Cheeni)
- - - 4.5 Cups Yakhni (OR TAKE 3 TABLESPOONS CHICKEN POWDER AND MIX WITH 4.5 CUPS OF WATER) (add yakhni 1.5 times more than rice) (chawal se dairh gunna zada yakhni)
- 3 Cups Rice (Soaked for 3 hours)
- - - 1/2 Teaspoon Salt or as needed (add if it is needed)
- Place on damm for 20 minutes.
- - Garnish with lemons, fresh coriander and chaat masala
