We’re very excited about the upcoming release of our 2011 Napa Valley Cabernet Sauvignon. There is a beautiful bright acidity to it, some dusty tannins. Delicious. In our commitment to American oak has been a foundation of Silver Oak and really where we have come from. The character of American oak which is one of the unique signatures of Silver Oak, and owning our own cooperage in Missouri we control all aspects of the production of these barrels. It really frames this raspberry fruit beautifully and the strong vanilla and coconut character. The open grain of American oak contributes flavors early so the wine is drinkable upon release. Letting the wine age combined with our bottle aging really creates the drinkable upon release character that we really look for in Silver Oak. I also love the way American Oak adds a little bit of oak pop as the wine ages, so ten years out you’ll still get a little bit of vanilla flavor where as other types of oak you might not get anything. I think wines aged in American oak are extremely food friendly and compliment many different kinds of food. I can see it pairing well with anything from a creamy mushroom risotto to an herb encrusted pork tenderloin, roasted vegetables and cheeses. Release Day is February 6th this year. We are going to have a fantastic day. It’s the culmination of five years of work from growing the grapes and fermenting them, putting the blend together and aging it, bottling it and now we get to share it with our friends and release it to the public.
