OK, I'll admit it, Sony have pretty much blown Canon out of the water with this one. The A7S3 is a better camera than the R5. But... and it's a big but... that's only in video terms and the R5, dare I say it, is a better 'all round' camera or hybrid camera. E.G. if you were to own one camera to do video and photo, then the R5 pips the A7. But that's pretty obvious information, let's face it. Sony aren't really pushing the A7SIII for photography and in a way, Canon made a bit of a mistake pushing this camera as a video-centric camera. With it's great focus tracking system, high detailed sensor, fast burst shooting and IBIS (allowing for great slow shutter hand held photos), they really should have marketed this primarily as a photography camera.
The overheating is a major problem. It'll be interesting to see how it pans out when people get hold of this camera. Will it be improvable via a firmware update? Such as a new codec to lessen the processing load on the sensor? Perhaps a better 'sleep' mode to shut the camera down when it's not recording. Who knows.
For me, the worst thing about the camera (yes, even worse than the overheating). Is the dynamic range, or lack of. Currently the R5 is outputting a similar 12 stop (probably slightly less) DR as the EosR and that isn't great. Not by today's standards. But all is not lost, the sensor itself has good dynamic range but Canon would need to unleash it through a firmware update. Hopefully we'll see that in the near future.
In my honest opinion, if you're starting out doing video, then the R5 isn't the first camera to go for. I would strongly advise anyone to go for the Sony first. But if you're a photographer with an interest in capturing high quality video, then this could be an amazing camera. Also, if you're like me and you shoot a mixture of photography and video and have a selection of Canon glass already then this camera should deliver. In droves.
One last thing. As a bird photographer, this camera could be great. Excellent focus, great detail on the sensor, burst mode at 12fps mech and 20fps digital shutter and also 8k video which could be fantastic for capturing stills of birds and wildlife. I'd personally love to see Canon offer a full 'crop mode' in which they would crop in to 4k pixel on pixel on the sensor to allow for great zoom power. This would be excellent for filming wildlife, especially if 120fps was on offer.
