Indeed, even « whole » bread is very poor in nutrients compared to fruits, veggies, grains and other whole foods. 💢 It tend to come with a high amount of calories for a rather poor nutrient content.
But if you are like me and love having some bread with your meals, here is another easy, much healthier, and not necessarily more expansive option : make your own lentil bread ! ⭐️
It’s much easier than you think and you will end up with a REAL whole bread, with a lower glycemic index and a bunch of proteins. 💪🏼
🔎 Approximate macros for 100g
🔥 Calories : 242
💪 Proteins : 14,4 g
⚡ Carbohydrates : 38 g
🥜 Fats : 3,4 g
📜 Ingredients:
▪ 360g raw lentils
▪ 250ml water
▪ 15g olive oil
▪ 10g salt
▪ 40g corn starch
▪ 40g flour
▪ 15g flaxseed
▪ 7-10g baking powder
🍽️ Recipe :
1. Important: Soak the lentils for at least 4 hours (for better digestion and absorption of nutrients)
2. Pour the lentils, oil, salt and flaxseed in a blender
3. Blend and slowly add the water until smooth, add more water if needed. (Optional : add spicies of your taste. I love using curcuma for the colour)
4. Transfer to a mixing bowl, add the corn starch and flour, then combine
5. Bake at 180° for 45-50 min
6. Enjoy ! Just as any other kind of bread
💡 Tipps : Adapt the quantity of salt depending on your liking. When it comes to the spicies, I like to use curcuma or cinnamon for more colours and a spicier note.
