Ingredients:
• 2 cups all-purpose-flour, sifted
• 1 tsp baking soda
• 1 teaspoon baking powder
• ¼ teaspoon salt
• ¼ cup canola oil
• 1 cup brown sugar
• 3 eggs, at room temperature
• 1 tsp vanilla extract
• 3 small mashed ripe bananas
• ¼ cup NADA Greek yogurt zero fat vanilla
• ½ cup creamy peanut butter
Directions:
1. Preheat oven to 180°C / 350°F. Grease a 9×5-inch loaf pan.
2. In a large bowl combine flour, baking powder, baking soda, and salt. Set aside.
3. Using electric stand mixer fitted with the paddle attachment, beat oil, sugar, eggs and vanilla about 3 minutes.
4. Add bananas followed by peanut butter and beat until combined.
5. Gradually add dry ingredients; flour, baking soda, baking powder and salt.
6. Beat in yogurt.
7. Pour batter into pan and bake for 50 minutes or until a toothpick inserted into the center of the bread comes out clean.
8. Allow bread to cool for 10 minutes, then turn it out and let it cool completely on a wire rack.
