Preheat your oven for 375°F.
Wet ingredients for Apple mixture:
2 Gala, Cameo or Red Delicious Apples, peeled and chopped into bite sized pieces
4 tablespoons of Unsalted Butter
1 cup of Granulated Sugar
2 teaspoons of Pure Vanilla Extract
1 jumbo Egg, room temperature
Put the apples and butter into a large microwave safe bowl, and microwave for 10 minutes, do for 1 to 2 minutes at a time, stirring occasionally, just until the apples are nice and soft and the butter will melt. Once after 10 minute, take it out of the microwave, stir with a wooden spoon, put it into the blender or a food processor, and purée. After purée, return into bowl, or if you have a stand mixer with the paddle attachment as well. Add the sugar, and keep stirring it so the sugar will dissolve. Add in vanilla then the egg, and keep going. Set it aside for a moment.
Dry ingredients:
2½ cups of All Purpose Flour
1 tablespoon of Baking Powder
¼ teaspoon of Salt
1½ teaspoons of Ground Cinnamon
In a separate bowl, combine the flour, baking powder, salt, cinnamon, and stir with a whisk together.
Dry to the wet:
Add the dry to the apple mixture little by little, and stir until you get a nice cookie dough.
Last two ingredients to fold in:
1 cup of Chopped Walnuts
¾ cup of Sun-Maid Natural California Raisins
Gradually add in the walnuts, and fold it in. Follow by the raisins.
Assembly:
Spoon the cookie dough onto the large cookies sheet lined with parchment paper using with a smaller sized ice cream scooper. Make sure to leave some space for about 2 inches apart before spread over in the oven. Bake it for 10 minutes in the oven for 375°F until the cookies will be nice and golden brown. After 10 minutes, transfer to 245°F, and bake for additional 7 minutes. Once after baking, take it out of the oven, put it on the wire rack to cool completely.
“It’s time for Cookie Monster!!!!!”, we’d growl.
